Abstract
In this study the influences of modified atmospheres on product quality of fresh cut lettuces being packed in polyethylene bags were investigated under refrigeration conditions. In order to avoid fermentation processes within the product, anaerobic conditions must be prevented inside the packages. In case of high respiration rates of the lettuces and use of packaging materials limiting the permeation of oxygen into the package, anaerobic conditions can be delayed by use of modified atmospheres with initial oxygen concentrations above those of air (e.g. 30 percent). In modified atmospheres like 30 percent O2 : 10 percent CO2 : 60 percent N2 the quality of shredded salad mixtures could be kept on a higher level compared with air-packed controls.
