Dieses besitzt einen Proteingehalt von 60 %, eine hohe sensorische Qualität, eine helle Farbe sowie positive funktionelle Eigenschaften. Damit eignet das pflanzliche, GMO- und allergenfreie Protein sehr gut zur Herstellung von Backwaren, Aufstrichen und dergleichen.

The Fraunhofer Institute for Process Engineering and Packaging IVV has developed a technology that can be used to produce a functional sunflower protein preparation.
