Abstract
During the development of an enzymatic process for the synthesis of mannitol four NADH-dependent mannitol dehydrogenases were isolated and caracterized. The kinetic parameters were studied and the constants were calculated from initial rate experiments with non linear regression methods. Experiments producing mannitol were carried out in an enzyme membrane. They were compared to a simulation model based on the Michaelis-Menten kinetics. Results concerning the behaviour of mannitol dehydrogenases in such a reaction system and the cost of the enzymes are presented.
