Recovery of lecithin from egg Yolk-extracts by gas antisolvent crystallization

Abstract
The Gas Antisolvent Process can be applied to different crystallization tasks by choice of appropriate process parameters. In the present case lecithin was to be gained from de-oiled egg yolk. Optimization of various process parameters and modifications of the used 6 l plant finally led to a stable and economical process. The example shows the whole range of possibilities offered by the Gas Antisolvent Process for individual product recovery. In conclusion with the gained results the processing costs for industrial scale operation are estimated for different capacities, and possible improvements are discussed.
