Development of a plant for automatic boning of chop racks
Abstract
The 'New Production' department of the Fraunhofer IPA has developed and implemented a plant for the automatic boning of chop racks together with the company Schmid & Wenzel GmbH & Co, Maulbronn. A solution to boing a chop rack with complex material properties in such a manner that, on the one hand a minium of residual meat portion remain on the bones and on the other hand a maximum cut quality can be obtained, appears to be closed by using robotics and sensor technology. The technical process is based on specially shaped and spring-mounted blades, these are adapted to the anatomy of the chop racks. The economic aim of this is to be able to offer the consumer the qualitatively best food product at affordable prices.
