Abstract
The food industry is currently going through a phase of upheaval. It is confronted with an increasingly complex and globalised world, but at the same time cannot afford to lose its flexibility in the face of dynamic competition. Attention is focusing ever more on the quality and safety of foods. However, the food industry often still has to use conventional technologies to tackle the challenges.
