Alicyclobacillus acidoterrestris. Influence of Oxygen Content on Growth in Fruit Juices

Abstract
Our studies demonstrated that redox-potential plays an important role in the spoilage of fruit juices. However, the influence of Eh-values is less than that of pH and aw or from the presence of phenolic compounds which can be inhibitory for A. acidoterrestris. Some fruit juices might not be prone to spoilage by alicyclobacilli following the addition of ascorbic acid or by lowering the oxygen content considerably. Both procedures might even improve the quality of fruit juices.
