Modelling of lipase-catalyzed interesterification in a solvent-free system
Abstract
With immobilized lipases interesterification of edible oils and fats is possible in a continuous process with reaction conditons milder than in the alkali-catalyzed reaction. Important variables for the solvent-free reaction in a fixed-bed reactor have been determined experimentally and a heterogeneous reactor model has been established. Parameters of hydrodynamics and mass-transfer have been determined by dynamic modelling of residence time measurements. For the kinetics of the interesterification a rate equation analogous to a chemical heterogeneous reaction has been derived by theoretical considerations. The results of continuous experiments in a fixed bed reactor are in good agreement with numerical results of the reactor model.
