Recovery of Sodium Chloride from Industrial Curing Solutions
Abstract
In the German meat product industry, the production of raw cured meat requires some 14,000 m3 of curing solution annually. Up to now, this effluent flow was mixed with the industrial wastewater and discharged into the public sewer system. The major component of the curing solution is sodium chloride - at concentration levels of around 200g/l. In addition to this anorganic load, the curing solution also contains a high amount of organic nitrogen compounds (proteins, peptides) as well as sugar. A separate conditioning of the curing solution in order to recover the sodium chloride can reduce the company`s environmental protection costs and is also very interesting from an ecological point of view. It was shown that the quality of the recycled salt is influenced primarily by the concentration levels of two organic nitrogen fractions in the crystallizer. About 65% of the sodium chloride can be recovered.

In der deutschen Fleischwarenindustrie fallen bei der Herstellung von Rohpökelwaren jährlich etwa 14.000 m³ Pökellake an. Dieser flüssige Abfallstrom wird bislang mit dem betrieblichen Abwasser vermischt und über das öffentliche Kanalnetz entsorgt. Die Hauptkomponente von Pökellake ist Kochsalz. Es liegt in einer Konzentration von etwa 200 g/l vor. Neben dieser anorganischen Fracht enthält Pökellake auch einen hohen Anteil organischer Stickstoffverbindungen (Proteine, Peptide) sowie Zucker. Eine separate Aufbereitung der Pökellake zur Rückgewinnung des Kochsalzes kann die Kosten für den betrieblichen Umweltschutz senken und ist zudem ökologisch sehr interessant. Dabei zeigt sich, daß die Qualität des recyclierten Salzes primär durch die Konzentration von zwei organischen Stickstofffraktionen im Kristallisator beeinflußt wird. Etwa 65 % des Kochsalzes können zurückgewonnen werden.
