Abstract
(A1) Die Erfindung betrifft ein Verfahren zur Entfernung unerwuenschter Begleitstoffe, insbesondere Aromen-, Geschmacks- und/oder Farbkomponenten aus Pflanzenproteinen, umfassend die folgenden Schritte: i Extraktion eines pflanzlichen Rohstoffs mit einem Extraktionsmittel, wobei ein Pflanzenproteinextrakt erhalten wird; ii Zugabe eines anorganischen Adsorbermaterials zu dem Pflanzenproteinextrakt, wobei unerwuenschte Begleitstoffe, insbesondere Aroma-, Geschmacks- und/oder Farbkomponenten an das anorganische Adsorbermaterial gebunden werden.
DE 102007047764 A1 UPAB: 20090503 NOVELTY - Removing unwanted associated materials (preferably flavor-, taste- and/or color-component) from plant proteins, comprises: extracting the plant raw materials with an extraction agent to obtain the plant protein extract; and adding an inorganic adsorbing material to the plant protein extract, where the unwanted associated materials are bound to the inorganic adsorbing material. USE - The method and the clay are useful for removing unwanted associated materials (preferably flavor-, taste- and/or color-component) from plant protein, where: the flavor-, taste- and/or color-components are polyphenols, preferably hydroxy cinnamic acid, caffeic acid or sinapinic acid and its derivatives such as sinapine and chlorogenic acid (preferably hydroxy cinnamic acid and phenolic acid); and the clay is hydrotalcite, preferably synthetic hydrotalcite (all claimed). The obtained plant protein concentrate is useful in foodstuffs and pet food. ADVANTAGE - The method, by using inorganic adsorbing material, removes the interfering associated materials with high selectivity from the plant protein extract without high protein loss.
