Contamination control in meat processing
Abstract
In order to guarantee product safety and to optimise sensory characteristics it is of central importance in the meat processing industry to control the microbiological quality. Through a specific well thought-out use of cleanroom technology, progresses can be reached which raise the competitiveness of products in a decisive ways. The Fraunhofer-Institute for Manufacturing Engineering and Automation IPA studies intersectorally the scientific backgrounds of this technology.
