The paper gives a brief review of oxidation mechanism, the methods for the rapid determination of oxidative stability of fats and their application for the evaluation of antioxidants activity. The performance of the HKF-test and the Rancimat apparatus is given, the possibilities and limits of application and the correlation of the results. Several vegetable oil samples were used for the investigation. The antioxidant activity was investigated using synthetic antioxidants as well as cocoa extract and cocoa powder as natural antioxidants.
