Abstract
(A1) Die vorliegende Erfindung betrifft ein Verfahren zur Herstellung einer proteinhaltigen Lebensmittelzutat, bei dem Leinschrot mit einem geringen Restoelgehalt erzeugt oder bereitgestellt wird, aus dem Teile von nativem Leinprotein und loeslichen Ballaststoffen durch waessrige Extraktion in einer waessrigen Phase geloest oder zumindest dispergiert werden. Der dabei erhaltene waessrige Totalextrakt wird von unloeslichen Leinschrotfraktionen befreit. Anschliessend wird ein Lein-Protein-Ballaststoff-Gemisch aus der waessrigen Phase abgetrennt, um damit die Lebensmittelzutat zu erhalten. Die auf diese Weise erhaltene Lebensmittelzutat ist geschmacklich neutral, technologisch funktionell und lagerstabil und zeichnet sich durch gute Proteinloeslichkeit und ausgezeichnete Grenzflaecheneigenschaften aus.

ACTIVITY - Fertilizer. MECHANISM OF ACTION - None given. USE - The protein-containing food additive is useful for the production of food-foams and -emulsions. The flax pellet is useful as fodder or fertilizer. No biological data given. ADVANTAGE - The food additive shows neutral taste, good protein solubility and excellent boundary surface characteristics. The food additive is technologically functional and storage-stable.
